  • 25mloil, rapeseed
  • 2wholeonion≈ 300 g onion
  • 5clovegarlic
  • 30gginger root
  • 40gBerbere Spice Blend
  • 0.5tspspice, fenugreek, ground
  • 350glentils, red
  • 900gwater
  • 0.5tspsalt
  • 15glemon juice

Instructions

Process

  1. Prep:
    1. Finely chop the onions
    2. Mince the garlic and ginger
    3. Rinse the red lentils
  2. Add oil and onion to a heavy pot; cook on low for 20-25 minutes, stirring occasionally. Should be no browning, completely soft, lightly jammy.
  3. *** COOK 20 MINUTES ***
  4. Add the garlic and ginger, cook 1 minute until fragrant - no browning
  5. Add the berbere and fenugreek; cook 3-4 minutes stirring constantly. Should darken a little and start to smell deep and warm. If too dry add a tiny bit of water.
  6. Add the lentils and water, stir well, bring to a gentle simmer.
  7. Cook for 35-40 minutes, uncovered, stirring occasionally, until fully soft. Add small splashes of water if it’s too dry.
  8. *** COOK 40 MINUTES ***
  9. Continue to cook until thick and cohesive
  10. Stir vigorously for 30-60 seconds to break things up and create body
  11. Salt to taste
  12. Remove from heat and stir in the lemon juice
  13. Allow to sit for 15 minutes before serving
  14. *** WAIT 15 MINUTES ***
