- 1single, 5gchilli, green fingerminced
- 15gginger rootgrated
- 10gherb, coriander, fresh
- 0.125tspsalt
- 0.125tspmonosodium glutamate
- 0.125tspspice, pepper
- 0.5tspspice, garam masala
- 0.5tspspice, chili powder
- 1tspspice, coriander, ground
- 0.5tspspice, chaat masala
- 0.5tspspice, amchoor
- 0.125tspspice, fenugreek, ground
- 0.5tspherb, fennel seedstoasted and ground

Process
- Filling
- Boil and mash the potatoes; should be done but not mushy. Make sure all chunks are broken down.
- Spread out and let steam escape for 5-10 minutes
- Toast the fennel seeds briefly, then crush
- Add the spices and herbs, mix well
- Assembly
- Divide the dough and the stuffing each into portions.
- Press out a dough ball into a disc.
- Hold the disc in hand, place the stuffing portion in the middle. Bring the sides up to shape like a cup and gradually stuff and stretch until you have a sealed dough-covered ball of stuffing. Flatten back into a disc, careful not to tear.
- Cooking
- Medium pan, approx 6 mins per side - reduce heat if burning.
