  • 800gspinach, frozensqueezed out
  • remove from heat
  • 60gcheese, cheddar
  • 250gcheese, ricotta
  • 100gyoghurt, greek, homemade
  • 20gjalapeno, pickled
  • 10glime juice
  • 0.125tspmonosodium glutamate
  • 0.25tspspice, pepper
  • assembly
  • 5singletortilla wraps, flour
  • 35gcheese, cheddar

Instructions

Process

  1. Prep:
    1. Scallions: sliced
    2. Garlic: minced
    3. Spinach: thawed and squeezed out
    4. Cheddar: grated
  2. Sauce
    1. Simmer all together for 15 minutes until thickened
  3. Filling
    1. Melt the butter over medium
    2. Add the scallions and garlic, cook 2-3 minutes
    3. Stir in the spinach, cook 5 minutes
    4. Remove from heat
    5. Mix in the cheese and other ingredients.
  4. Assembly
    1. Quarter of the sauce on the bottom
    2. Fill each tortilla with the spinach mixture, roll, and place seam-side down on the sauce
    3. Pour the rest of the sauce on top
    4. Sprinkle the cheddar
  5. Bake for 20 minutes at 180C
