Instructions
Process
- Preheat oven to 170 degrees. Line baking sheet with parchment paper.
- Dry
- Whisk flour, baking powder, baking soda, and table salt in a medium bowl.
- Wet
- Beat butter and sugars until light and fluffy
- Add egg and vanilla and beat until incorporated.
- Add dry to wet gradually and mix until just incorporated and smooth.
- Gradually add oats and white chocolate and mix until well incorporated.
- Roll into balls - approx 35g - then place on lined baking sheets about 2 1/2 inches apart.
- Using fingertips, gently press down each ball to about 3/4-inch thickness.
- Sprinkle several grains of sea salt on each cookie. (I usually do 9-10 granules of 'cheap' sea salt. If you're using nice flakes just a couple) - nice flakes on top of each cookie is a must.
- Bake until cookies are deep golden brown - 13-16 minutes at 170C. Rotate baking sheet halfway through.
- Transfer to wire rack to cool.
