- 3wholelemon
- 9tspsalt
- 2perherb, bay leaf
- 0.25tspspice, peppercorns
- 100glemon juice
Instructions
Process
- Sterilise a jar just large enough for the lemons - fill it with boiling water, leave for 1 minute, then empty it and allow it to dry naturally (don’t use cloth so it remains sterilised).
- Wash the lemons, then cut a vertical cross down to 2cm from the base through almost the entire lemon
- Stuff each with a tbsp of salt
- Pack into the jar tightly
- Add the bay leaves and peppercorns
- Seal the jar, shake a bit
- *** LEAVE FOR 1 WEEK -- cool dark place, not fridge ***
- Squeeze out the juice of the lemons and add them back to the jar.
- Add more lemon juice (bottled) to cover
- Add a little olive oil to float on top.
- *** LEAVE FOR AT LEAST 4 WEEKS -- can be fridge ***
- They should last a couple of months in the fridge now.
