  • 1Pastry Base, Shortcrust, 9"
  • 120gpotato
  • 3largeegg
  • 45mlcream, double, fresh
  • 90gcream, sour
  • 0.5tspsalt
  • 0.125tspspice, nutmeg
  • 60gcheese, goat's cheese, soft
  • 2tspherb, rosemary, dried
  • 25gcheese, parmesan

Instructions

Process

  1. Blind bake the pastry
  2. Whisk the eggs and cream, sour cream, salt, pepper and nutmeg.
  3. Apply an egg wash to the pastry.
  4. Lay the potato slices on top of the pastry
  5. Spread the soft goat's cheese in lumps on top.
  6. Sprinkle the salt, pepper and rosemary over.
  7. Pour the egg-cream mixture over it all.
  8. Sprinkle the grated goat's cheese on top.
  9. Bake for approx 45 minutes at 180C; it should be golden brown and the top should be firm. Allow to cool slightly before serving.
