Ingredients

  • 5mloil, rapeseed
  • 1tspspice, cumin, seed
  • 1perspice, cinnamon stick
  • 0.25tspspice, peppercorns
  • 1wholeonion≈ 150 g onion
  • 30mlwater≈ 30 g water
  • 6clovegarlic
  • 20gginger root
  • 300gchicken breast, raw
  • 1tspspice, chili powder
  • 1.5tspspice, coriander, ground
  • 0.5tspspice, cumin, ground
  • 0.5tspspice, turmeric
  • 0.125tspsalt
  • 0.25tspmonosodium glutamate
  • 200gchopped tomatoes
  • 500gspinach, frozen
  • 7.5gbutter
  • 1tspspice, fenugreek, seed
  • 0.5tspspice, garam masala
  • 30mlherb, coriander, fresh≈ 4.32 g herb, coriander, fresh

Process

  1. Preparation
    1. Chicken - bite-size pieces
    2. Fenugreek seeds - crush properly
    3. Blend and drain the spinach
  2. Heat the oil to medium
  3. Saute the onions with the whole spices until golden (5 minutes); deglaze as necessary if they are browning unevenly.
  4. Add the garlic and ginger, cook 30 seconds
  5. Add the chicken, saute for 3 min until it starts to sear lightly.
  6. Add the ground spices and salt, cook 1 minute
  7. Add the chopped tomatoes, saute until softened; deglaze with a little water if needed.
  8. Add the spinach, stir to mix.
  9. Allow to cook until the chicken is done and the spinach has lost its excess moisture and absorbed the spice flavours.
  10. Stir in the finishing ingredients and serve.
