Ingredients
- 5mloil, rapeseed
- 0.5wholeonion≈ 75 g onion
- 3clovegarlic
- 0.0625tspsalt
- 1mushroom (pack (400g))≈ 320 g mushroom
- 0.5tspspice, chilli flakes
- 0.25tspspice, pepper
- 0.5tspherb, thyme, dried
- 50stock, vegetable, low salt (ml (prepared/500ml))≈ 0.1 cube stock, vegetable, low salt
- 250gpotato
- 100gspinach, fresh
- 0.25tspmonosodium glutamate

Process
- Prep:
- Thinly slice the mushroom
- Potatoes
- Cube the potato small (¼-inch)
- Simmer until tender, then drain
- Allow to steam-dry for 5 minutes
- Spinach
- Roughly chop, then wilt in the pan
- Squeeze out well
- Mushrooms & Combine
- Heat the oil
- Add the onion, cook until translucent
- Add the garlic and salt, stir, 1 minute
- Add the mushrooms; cook on high, for 2-3 minutes until they’ve released moisture and the pan dries up
- Stir in the chilli flakes, pepper, thyme.
- Add the stock, reduce until almost completely gone.
- Fold in the cooked potatoes; allow to sit in the pan for 2-3 minutes
- Remove from heat
- Fold in the cooked spinach
- Add the msg.
- Fridge to cool completely
