Lemon Butter Pasta

Process

1. Prep
   1. Lemon:
      1. zest and juice
      2. Make 4 thin slices (for 2 portions) for caramelisation
2. Breadcrumb topping
   1. Heat the oil to medium
   2. Add the breadcrumbs, toast 3 minutes
   3. Add the rest of the ingredients, cook 1 minute
   4. Remove and set aside
3. Pasta
   1. Cook until al dente
   2. Reserve the cooking water
4. Lemon
   1. Heat the butter to medium high
   2. Add the lemon slices
   3. Sear until caramelised - approx 1 minute per side
   4. Remove from heat
   5. Finely chop the lemon slices, set aside
   6. Mix together the zest, juice, basil
5. Sauce
   1. Heat the butter to medium
   2. Add the courgette; cook until golden, approx 5 minutes
   3. Add the garlic and seasonings, cook 30 seconds
   4. Add the pasta, half of the lemon-basil mixture, and pasta water as required. Toss vigorously, stirring and adding more water until glossy and emulsified.
   5. Remove from heat
6. Assembly
   1. Pasta+sauce
   2. lemon/basil mix
   3. Sliced lemons
   4. Breadcrumbs
