- 240mlwater≈ 240 g water
- 2tspyeast, dry
- 2.5gsugar, white
- 340gflour, white
- 1.5tspsalt
- 30mloil, olive, virgin

Process
- Mix the sugar and yeast with 50ml of 32C water. Leave for 5 minutes.
- Add 1/5th of the flour and the rest of the water. Whisk together, leave for a further 10 minutes.
- Add the salt, olive oil, remaining flour, stir until it’s a shaggy mess.
- Stand mixer knead for 3 minutes at low/medium speed.
- ** REST 10 MINUTES **

- Put the dough in an oiled bowl. It should be a little moist but not too wet at this point
- ** COVER AND ALLOW TO RISE 1 HOUR **
- Divide into 8 pieces (assuming full recipe) and shape into balls. Flour as necessary.
- ** COVER AND REST 10 MINUTES **
- Preheat the oven and the large skillet to 245C
- On a floured sheet press the balls out to a roughly circular shape. Once the first two are done, you can start baking them in parallel.
- Bake for 3 minutes on the first side, then flip and 3 minutes on the other side.
Notes
Wait until they’re cool before slicing open.
