- 2.5mloil, rapeseed
- 1wholeonion≈ 150 g onion
- 3clovegarlic
- 140gChickpeas, from dry
- 0.125tspsalt
- 0.0625tspmonosodium glutamate
- 0.25tspspice, pepper
- 0.25tspspice, paprika, sweet
- 0.25tspspice, paprika, smoked
- 0.5tspherb, oregano, dried
- 125stock, vegetable, low salt (ml (prepared/500ml))≈ 0.25 cube stock, vegetable, low salt
- 1wholelemon zest
- 80gyoghurt, greek, homemade
- 60gspinach, fresh
- 30glemon juice
- 15mlherb, parsley, fresh≈ 3.9 g herb, parsley, fresh
- 30gcheese, feta
Instructions
Process
- Prep:
- Onion: chop
- Garlic: grate
- Feta: crumbled
- Heat the oil to medium
- Add the onion, cook 3 minutes until soft
- Stir in the garlic, cook 30 seconds
- Add the chickpeas and seasoning, cook 3 minutes until some of the chickpeas start to pop and turn lightly golden
- Add the stock, simmer 5 minutes. Can mash a few of the chickpeas at this point to change the texture
- Stir in the lemon zest, cook 1 minute
- Remove from heat
- Stir in the yoghurt until it melts into the chickpeas and forms a light creamy sauce
- Add the spinach and lemon juice, stir until the spinach is wilted.
- Divide into portions
- Sprinkle the parsley and feta on top.
