- 2.5mloil, rapeseed
- 0.5tspspice, peppercorns
- 0.5wholeonion≈ 75 g onion
- 0.0625tspsalt
- 0.25tspspice, pepper
- 0.25tspspice, turmeric

- 10gginger root
- 400gchopped tomatoes
- 0.5tspspice, chili powder
- 0.125tspspice, cayenne pepper
- 0.5tspspice, garam masala
- 0.125tspmonosodium glutamate
- 3largeegg
- 15mlwater≈ 15 g water
- 15mlherb, coriander, fresh≈ 2.16 g herb, coriander, fresh

Process
- Preparation:
- Grate the ginger and garlic
- Beat the eggs with a little water
- Roast the peppercorns in the oil until they slightly pop (but no longer)
- Add the onions, cook slowly until slightly brown, soft and translucent - approx 10-12 minutes.
- Lower heat, add the pepper and turmeric; stir 20s until fragrant
- Add the ginger and garlic, cook 30-45s stirring constantly.
- Add the chopped tomatoes, increase to medium, cook (stirring occasionally) until the mixture is thick and the water has cooked off - approx 12 minutes.
- Lower the heat; add the remaining spices/salt/msg. Stir well and cook 30 seconds.
- Pour half the eggs into the pan, stir gently until soft curds form
- Pour in the remaining eggs, fold until the eggs are just set but still moist.
- Remove from heat, stir in the coriander.
