Coriander Leaf Simple Syrup (Unheated & blended)

  1. Use both leaves and stems, make sure to remove any grotty bits. Chop roughly.
  2. Blend together the water and coriander - stick blender probably fine, do continuously for 30-45s
  3. Strain through a fine mesh
  4. Add the sugar and stir until it’s fully dissolved - approx 1 minute
  5. Wait at least 15 minutes to use

Vibrant coriander taste. Hard to tell the difference between this and the heated version.

  1. Combine the sugar and water, heat until simmering and then continue at reduced heat until it is reduced by half - approx 15 minutes.
  2. Allow to cool fully

Coriander Leaf Simple Syrup (Steeped & Heated)

  1. Combine the sugar and water, heat until simmering, then remove
  2. Add the chopped coriander - leaves and stems. Muddle it a bit, then leave for 45 minutes.
  3. Strain it out.
  4. Return to heat, bring to a simmer and then continue at reduced heat until it is reduced by half - approx 15 minutes.
  5. Allow to cool fully

Comments

Was a much more subtle coriander flavour than the others, which makes sense given no solids.

Coriander Seed Simple Syrup

  1. Make a paste with the water and coriander seeds - grind the coriander seeds first.
  2. Add the sugar, then bring the mixture to a simmer.
  3. Add the salt, allow the mixture to reduce - 10-15 minutes. Add the red pepper flakes towards the end.
  1. Strain it out.
  2. Allow to cool fully

Coriander Leaf & Lime Gin Cocktail

  1. Combine the gin (alcoholic or non-alcoholic) with the syrup and lime juice, shake well with ice.
  2. Strain into a glass and top up with soda water or tonic.
