Ingredients
- roast the tomatoes
- 1tomato, cherry (pack (300g))≈ 300 g tomato, cherryhalved
- roast the onions
- 2wholeonion, red≈ 153 g onion, red
- 0.25tspsalt
- 0.5tspspice, pepper
- steam the broccoli
- 1Broccoli, Steamed (whole (250g))
- cook the barley
- 100gbarley, pearl
- 25glemon juice
- 0.125tspsalt
- 0.25tspspice, pepper
- 4tspspice, za'atar
- mix the salad
- 30mlherb, parsley, fresh≈ 7.8 g herb, parsley, fresh
- 2single, 20gchilli, redminced
- make the dressing
- 100gyoghurt, greek, homemade
- 5mloil, olive, regular
- 30glemon juice
- 3tspspice, coriander, ground

Bulgar Salad with Broccoli & Za'atar

Process
- Tomatoes:
- Cut in half
- Roast for 90 minutes at 160/140C
- Onions
- Roughly chop
- Mix with the salt and pepper
- Roast at 200/180C for 45 minutes
- Barley
- Rinse well
- Barley into saucepan, 5x water
- Bring to a boil, boil 10 minutes
- Reduce to low, simmer 50 minutes
- Rinse in cold water, then drain
- Mix with the lemon juice etc
- Dressing
- Mix together
- Barley mix into a bowl
- Add the tomatoes and onions, mix well
- Add the broccoli, parsley, chilli, mix well
- Mix the dressing through
- Serve room temperature
Notes
maybe tone down the chilli a little next time
