  • 720gpotatocubed, boiled, mashed
  • 0.5wholeonion≈ 75 g onion
  • 2single, 5gchilli, green finger
  • 10gginger rootgrated
  • 45mlherb, coriander, fresh≈ 6.48 g herb, coriander, fresh
  • 30mlherb, mint, fresh≈ 4.32 g herb, mint, fresh
  • 20gcornflour
  • 0.5tspsalt
  • 0.25tspmonosodium glutamate
  • 0.5tspspice, coriander, ground
  • 0.75tspspice, cumin, seedtoasted and lightly crushed
  • 0.25tspspice, pepper
  • 0.5tspspice, chilli flakes
  • 0.5tspspice, chaat masala
  • 1tspspice, amchoor
  • 0.5tspspice, garam masala
  • 50gmilk, semi-skimmed
  • for frying
  • 2.5mloil, rapeseed

Instructions

Aloo Tikki

Process

  1. Cube and boil the potatoes for ~15 minutes until done but not mushy, then mash (but fine for there to still be chunks)
  2. Food process all other potato cake ingredients
  3. Mix the onion/spice mix with the potatoes
  4. *** FRIDGE FOR 30 MINUTES ***
  5. Light dusting of cornflour - v small
  6. Small bit of oil in the pan, heated to medium-hot
  7. Fry for ~4 minutes each side until starting to crisp

Notes

Optionally serve with chutney or spiced yoghurt
