Ingredients
- 10mloil, rapeseed
- 1tspspice, cumin, seed
- 0.125tspspice, asafoetida, ground
- 15gginger root
- 3single, 5gchilli, green finger
- 650gpotato2cm dice
- 0.5tspspice, chili powder
- 0.5tspspice, turmeric
- 3tomato (small (80g))≈ 240 g tomato
- 0.25tspsalt
- 0.25tspmonosodium glutamate
- 180gherb, fenugreek, fresh
- 5glemon juice

Process
- Prep:
- Fenugreek:
- Stem the methi fully, before washing
- Remove as much of the stem as possible (very tender stems are fine, but the others are bitter)
- Rinse the leaves in a bowl of water, then drain; there is often lots of dirt.
- Chop as normal
- cube/dice the ingredients as appropriate
- Fenugreek:
- Heat the oil over medium
- Add the cumin seeds, cook 20s until fragrant
- Add the ginger etc, cook 45s
- Add the potatoes etc, cook 2-3 minutes
- Add the chopped tomatoes etc; stir, cover, cook over low-medium for 5 minutes.
- Add the fenugreek; stir it in, cover, cook over low-medium for 20-25 minutes until the potatoes are tender. Add a little water only if it’s sticking.
- *** COOK 25 MINUTES ***
- Uncover, increase to medium-high, cook for 8-12 minutes until some potato surfaces are browning
- Remove from heat
- Stir in the lemon juice
- Rest for 5 minutes before serving
